Ingredients
- 2 tomatoes (quartered)
- 1/4 onion (quartered)
- 1 garlic clove
- 1 cup water
- 1 tbsp chicken bouillon
- 1/8 cup olive oil
- 2 cups long grain white rice
- 1/4 onion (finely diced)
- 1 garlic clove (finely minced)
- pinch whole cumin
- 1 1/2 cups water
Instructions
- Prepare the tomato sauce by boiling tomatoes, onion, and garlic in water for 4–5 minutes until soft. Cool slightly, then blend with chicken bouillon and set aside.
- Heat olive oil in a large stock pot over medium heat. Add rice and toast for about 5 minutes until golden. Stir in diced onion after 4 minutes.
- Add minced garlic, chicken bouillon, cumin, water, and blended tomato sauce to the pot. Stir well.
- Cover and cook on medium heat for about 12 minutes without lifting the lid. Afterward, turn off heat and let it rest covered for another 5 minutes before serving.
