Ingredients
- 2 large baking potatoes
- 200g block of feta cheese
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp black pepper
- 0.5 tsp red chili flakes
- 1 head of garlic (top cut off)
- 1 lemon, quartered
- 1 tbsp honey
- Fresh basil for garnish
Instructions
- Preheat your oven to 200C (390F).
- Wash and cube the potatoes. Boil in water for 6-8 minutes, then drain and let steam dry.
- Place the par-boiled potatoes in a baking dish. Season with thyme, oregano, salt, pepper, and drizzle with olive oil.
- Roast for 30-40 minutes until golden brown but slightly undercooked.
- Add the feta cheese in the center of the dish; sprinkle with seasonings and half of the lemon juice.
- Roast garlic separately until tender; mash and set aside.
- Return the dish to the oven for another 15 minutes.
- Stir in mashed garlic and remaining lemon juice into the potatoes.
- Drizzle honey over everything and garnish with shredded basil before serving hot.
