- 1/4 cup granulated sugar
- 1 large egg yolk (room temperature)
- 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with paper baking cups.
- In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
- In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until combined. Gradually add dry ingredients while mixing until smooth.
- In another bowl, beat cream cheese with sugar and egg yolk until smooth.
