  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Chill while making the cookie dough.
  2. In a separate bowl, cream together softened butter, light brown sugar, and granulated sugar. Mix in egg yolks and vanilla until combined.
  3. Whisk together all-purpose flour, black cocoa powder, baking powder, and salt in another bowl before adding it to the wet mixture.
  4. Preheat the oven to 350°F (175°C). Scoop cookie dough, flatten it, place a teaspoon of cheesecake filling in the center, fold, and roll into balls.
