Ingredients
- 1 lb. Mafaldine noodles (or fettuccini/linguini)
- 3 chicken breasts
- 4 tablespoons olive oil
- 6 tablespoons butter
- 6–8 cloves garlic, minced
- 2 cups heavy whipping cream
- 1.5 cups shredded parmesan cheese
- 4 tablespoons blackened seasoning
Instructions
- Pound chicken breasts to an even thickness of 1/4 inch; rub with olive oil and season with blackened seasoning.
- Heat a skillet over medium-high heat and add olive oil; cook chicken for 3-4 minutes until dark amber on one side.
- Flip chicken, reduce heat to low, add butter and garlic; cook until internal temperature reaches 165°F.
- Remove chicken to rest; in the same skillet, melt remaining butter, sauté garlic, stir in heavy cream and blackened seasoning; simmer until thickened.
- Cook pasta according to package instructions; reserve some pasta water before draining.
- Stir parmesan into the sauce; mix in cooked pasta and reserved water until well combined.
- Serve topped with sliced chicken and additional cajun seasoning if desired.
