  • 1 teaspoon salt
  • 1 large egg lightly beaten
  • 1/2 teaspoon white vinegar
  • 1/4 cup ice cold water
  • 3/4 cup cold unsalted butter cut into pieces
  • 1 large egg white lightly beaten
  • 3 large eggs
  • 1 can (15 ounces) pure pumpkin
  • 1/4 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground allspice
  • 3/4 cup pure maple syrup
  • 1 cup heavy cream

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt; then blend in cold butter until crumbly. Add egg, vinegar, and cold water to form dough. Chill for 30 minutes.
  2. Roll out the dough to fit a 9-inch pie dish, prick the base, and pre-bake at 375°F for 15 minutes.
  3. For the filling, mix pumpkin puree, sour cream, eggs, spices, and vanilla until smooth. Pour into the crust and bake at 375°F for about 55 minutes.
  4. Make whipped cream by beating heavy cream with sugar until soft peaks form.
  5. Once cooled, drizzle maple syrup over the pie and use a kitchen torch to caramelize the top.
