  • 2 packages (6 ounces each) Driscolls Raspberries
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 2 slices sourdough or French bread
  • 2 tablespoons mayonnaise
  • 2 ounces Brie cheese
  • 4 slices manchego cheese or alternative
  • 8 Driscolls Raspberries

Instructions

  1. In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling.
  2. Reduce heat and stir occasionally until mixture thickens into a jam-like consistency, about 15–20 minutes. Let cool.
  3. Spread mayonnaise on one side of each slice of bread.
  4. On one slice, layer raspberry compote, slices of brie, and manchego cheese. Top with the second slice of bread.
  5. Heat a non-stick skillet over medium heat and grill the sandwich for 3–5 minutes on each side until golden brown and cheese is melted.
