Ingredients
- 2 packages (6 ounces each) Driscolls Raspberries
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/4 cup orange juice
- 2 slices sourdough or French bread
- 2 tablespoons mayonnaise
- 2 ounces Brie cheese
- 4 slices manchego cheese or alternative
- 8 Driscolls Raspberries
Instructions
- In a small saucepan, combine raspberries, sugar, vanilla extract, and orange juice. Cook over medium heat until boiling.
- Reduce heat and stir occasionally until mixture thickens into a jam-like consistency, about 15–20 minutes. Let cool.
- Spread mayonnaise on one side of each slice of bread.
- On one slice, layer raspberry compote, slices of brie, and manchego cheese. Top with the second slice of bread.
- Heat a non-stick skillet over medium heat and grill the sandwich for 3–5 minutes on each side until golden brown and cheese is melted.
