  • 2 heads broccoli (about 1 and 1/2 pounds)
  • 1 cup dried cranberries
  • 1/3 cup roasted sunflower seeds
  • 1 cup shredded cheddar cheese
  • 1/3 cup chopped red onion
  • 1011 strips cooked chicken
  • 1 & 1/4 cups Miracle Whip or mayonnaise
  • 1 lemon zest
  • 1 tablespoon lemon juice
  • 2 tablespoons white grape juice vinegar
  • 1/4 cup sugar
  • 1 & 1/4 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat your oven and bake chicken strips until cooked through. Allow to cool before chopping into bite-sized pieces.
  2. In a large bowl, whisk together Miracle Whip (or mayonnaise), lemon zest, lemon juice, white grape juice vinegar, sugar, salt, black pepper, dry mustard, and cayenne pepper until smooth.
  3. Chop broccoli into small florets and add to the bowl along with cranberries, sunflower seeds, cheese, onion, and chicken.
  4. Mix all ingredients until evenly coated with dressing. Chill for at least 20 minutes before serving.
