Instructions

  1. Boil the eggs in a saucepan covered with cold water. Bring to a boil, cover, and let sit for 10–12 minutes.
  2. Transfer eggs to an ice bath for 5–10 minutes to cool. Peel and slice in half lengthwise, then remove yolks into a mixing bowl.
  3. Mash yolks with mayonnaise, mustard, Cajun seasoning, and lemon juice until smooth. Season with salt and pepper.
  4. Set up three bowls: one with seasoned flour, one with beaten egg mixed with milk, and one with breadcrumbs combined with paprika, garlic powder, and onion powder.
  5. Dredge each egg white half in flour, dip in egg wash, then coat in breadcrumbs.
  6. Fry breaded egg halves in hot vegetable oil (350°F) for about 1–2 minutes per side until golden brown. Drain on paper towels.
  7. Pipe or spoon yolk filling into the fried egg whites and garnish before serving.
