  • 3 ears of corn
  • 200g red grape tomatoes
  • 200g yellow grape tomatoes
  • 1 avocado
  • ¼ bunch cilantro (coriander)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp maple syrup

Instructions

  1. Preheat the grill or grill pan over medium-high heat. Slice the red onions into thick rings and brush with olive oil. Grill for about 10 minutes until tender.
  2. Husk the corn and brush with olive oil. Grill for about 15 minutes, turning until charred. Let cool, then cut off the kernels.
  3. In a large bowl, combine grilled corn, chopped onion, halved tomatoes, diced avocado, and chopped cilantro. Season with salt and pepper.
  4. Whisk dressing ingredients together in a small bowl. Pour over the salad and toss gently.
