- 3 shallots, finely diced
- 1 carrot, finely diced
- 2 small stalks of celery, finely diced
- 3 cloves of garlic, crushed
- 400g extra lean ground beef
- ½ tablespoon dried mixed herbs
- 400g canned chopped tomatoes
- 3 tablespoons tomato paste
- 1 tablespoon balsamic vinegar
- 1 teaspoon granulated sweetener or sugar (optional)
- 240ml chicken stock
- 500g pack of gnocchi
- 120g mature cheddar, grated
- Olive oil cooking spray
- Salt and black pepper
- Few fresh basil leaves, torn
Instructions
- Spray a frying pan over medium-high heat with olive oil spray. Add the ground beef and fry until golden brown. Once cooked, remove from the pan and set aside.
- In the same pan, add shallots, carrot, and celery. Sauté these ingredients until they soften. Add a little water or stock if needed to prevent sticking.
- Add garlic and ground beef to the pan. Cook until the beef is browned all over.
- Return the ground beef to the pan. Stir in mixed herbs, chopped tomatoes, tomato paste, sweetener (or sugar), stock, and balsamic vinegar. Bring everything to a boil, then cover and let simmer for 20 minutes until thickened.
- Stir in gnocchi into the sauce mixture. Simmer for an additional 5-8 minutes, stirring occasionally until the gnocchi is cooked through. If needed, add more stock if it absorbs too much liquid.
- Season your sauce with salt and black pepper to taste.
- Transfer everything to a baking dish. Top with grated cheddar cheese and place under the broiler/grill for about 4 minutes until melted and golden brown.
- Scatter fresh torn basil over your bake before serving immediately for extra freshness!
