  • 1 tablespoon, plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 3/4 cup (6 oz) whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Add onion, carrots, and celery; cook for about five minutes.
  2. Stir in garlic and cook for an additional minute. Add flour to create a roux; stir constantly for one minute.
  3. Gradually add evaporated milk and chicken stock while stirring until thickened.
  4. If using raw chicken, add the extra broth and simmer for 20 minutes; shred the cooked chicken and return to the pot. If using pre-cooked chicken, bring the soup to a boil before adding shredded chicken along with thyme, pepper, and salt.
  5. Lower heat to simmer while preparing dumpling dough.
