- 1 cup diced boneless skinless chicken breasts

- 1 cup fresh pineapple chunks
- 3/4 cup frozen peas and carrots (thawed)
- 3 cups cooked jasmine rice
- 2 Tbsp reduced sodium soy sauce
- 1 tsp toasted sesame oil
- Green onions (for garnish)
Instructions
- Heat 1 tablespoon of avocado oil in a wok or large skillet over medium-high heat. Add diced chicken seasoned with salt and pepper; cook until browned, about 5-7 minutes. Remove from pan.
- In the same pan, add another tablespoon of oil. Sauté onion, garlic, and ginger for about 3-4 minutes until fragrant.
- Stir in pineapple chunks and thawed peas and carrots; cook for another 2-3 minutes.
- Add cooked jasmine rice along with soy sauce and toasted sesame oil; stir well to combine and heat through for another 2-3 minutes.
- Return the cooked chicken to the pan; mix thoroughly and garnish with diced green onions before serving.
