  • 3/4 cups ditalini pasta
  • 4 cups chicken broth
  • 1 can cannellini beans
  • 1 bag spinach, chopped
  • 2 tbsp olive oil

Instructions

  1. In a large pot or Dutch oven, sauté chopped turkey strips over medium heat until crispy (about 8 minutes). Add olive oil, carrots, celery, and onions; cook until softened (10 minutes).
  2. Create a well in the center and add tomato paste; allow it to caramelize for 3 minutes before mixing.
  3. Stir in crushed tomatoes, basil, bay leaves, and remaining seasonings; bring to a simmer.
  4. Pour in chicken broth and add the parmesan rind; boil then reduce to simmer for about 15 minutes.
  5. Add cannellini beans and ditalini pasta; simmer for another 15 minutes until pasta softens.
  6. Stir in chopped spinach and cover for 3 minutes; remove bay leaves before serving hot.
