- 4 slices pineapple
- 1 avocado, sliced
- 1 corn on the cob
- 1/2 cup pepitas
- 1 cup fresh blueberries
- 1 Tablespoon olive oil
- 2–3 cups fresh mixed greens
Instructions
- Prepare the dressing by combining orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar. Blend until smooth using an immersion blender.
- Preheat your grill to medium-high heat.
