  • 4 slices pineapple
  • 1 avocado, sliced
  • 1 corn on the cob
  • 1/2 cup pepitas
  • 1 cup fresh blueberries
  • 1 Tablespoon olive oil
  • 23 cups fresh mixed greens

Instructions

  1. Prepare the dressing by combining orange juice, lemon juice, almond milk, parsley, olive oil, rice vinegar, shallots, and salt in a mason jar. Blend until smooth using an immersion blender.
  2. Preheat your grill to medium-high heat.
  3. Lightly brush pineapple slices with olive oil and grill for about 2 minutes per side until they have nice char marks.
  4. Grill corn on the cob for approximately 5 minutes on each side until slightly charred.
