- 2 eggs
- ¾ cup panko crumbs
- ¼ cup breadcrumbs
- 1 tsp dried parsley
- ½ tsp ground black pepper
- ½ tsp sea salt
- ½ tsp dried oregano
- 1 tsp garlic powder
- ¼ cup Parmesan cheese (freshly grated)
- 2 romaine hearts (chopped)
- 1–2 French baguettes
Instructions
- In a bowl, mix mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, black pepper, and salt to create the Caesar dressing. Set aside some for the salad.
- Flatten chicken cutlets if needed and season with salt and pepper.
- Prepare a breading station with flour mixed with salt and paprika in one plate; whisked eggs in another; and panko crumbs mixed with seasonings in the third.
- Dredge each cutlet in flour, dip in eggs, then coat with breadcrumbs. Fry until golden brown on both sides.
