  • 2 tablespoons olive oil (optional)
  • 3 large yellow onions, thinly sliced
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 1/2 cups beef broth (low-sodium)
  • 1 tablespoon brown sugar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons Worcestershire sauce
  • Dried thyme and bay leaves

Instructions

  1. Prepare the onions and garlic by slicing them thinly and mincing the garlic.
  2. In your crock pot on high heat, combine butter, onions, garlic, brown sugar, and balsamic vinegar. Stir well and cover; cook for about 20–30 minutes until onions begin to caramelize.
  3. Season the chuck roast with salt and pepper; optionally sear in olive oil until browned on all sides.
