  • 12.5 g salt
  • 312.5 g unsalted butter (cold)

Instructions

  1. Activate the yeast by mixing warm milk with yeast and letting it sit until frothy.
  2. Combine flour, sugar, and salt in a large bowl; add the yeast mixture to form dough.
  3. Knead the dough on a floured surface until smooth (8-10 minutes).
  4. Chill the dough wrapped in plastic for at least an hour.
  5. Pound cold butter into a flat rectangle; keep it chilled.
  6. Roll out the dough, encase the butter, and laminate through folding and rolling three times.
  7. Shape the croissants by cutting triangles from the rolled dough and rolling from base to tip.
  8. Proof on a baking sheet lined with parchment for about an hour until doubled in size.
