  • ½ teaspoon garlic powder
  • 1 tablespoon finely chopped parsley

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Halve the zucchinis lengthwise and scoop out some flesh to create space for the filling.
  3. In a mixing bowl, combine feta, Greek yogurt, Gruyere, chopped spring onion, lemon zest, garlic powder, parsley, olive oil, and oregano.
  4. Fill each zucchini half with the cheese mixture and place them in a baking dish. Drizzle with additional olive oil if desired.
