Instructions
- Preheat the oven to 200°C (390°F).
- Halve the zucchinis lengthwise and scoop out some flesh to create space for the filling.
- In a mixing bowl, combine feta, Greek yogurt, Gruyere, chopped spring onion, lemon zest, garlic powder, parsley, olive oil, and oregano.
- Fill each zucchini half with the cheese mixture and place them in a baking dish. Drizzle with additional olive oil if desired.
- Bake for about 45 minutes until tender and golden brown on top.
