  • 2 medium zucchinis (sliced)
  • 1.5 cups corn kernels (cooked)
  • 5 cloves garlic (minced)
  • 4 tablespoons butter
  • Fresh cilantro (for garnish)

Instructions

  2. Season chicken with smoked paprika, chili powder, salt, and pepper. Cook for about 6-7 minutes until golden brown on one side, then flip and cook for another 6-7 minutes until done. Remove and set aside.
  3. In the same skillet, sauté zucchini for about 3 minutes until slightly tender. Add corn and cook for an additional 2 minutes.
  4. Push veggies aside; add garlic to the empty space and sauté for 30 seconds. Then add butter to melt into the garlic.
  5. Combine chicken back into the skillet with lime juice; stir well and heat through for an additional minute.
