  • 200g mushrooms, sliced
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce
  • 1 tbsp plant-based oyster sauce
  • 1 tbsp hoisin sauce
  • 200g jasmine or long-grain rice
  • 300g fresh asparagus
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • Salt & pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook rice in salted water until tender (10-15 minutes) according to package instructions.
  2. In a separate pan, heat olive oil and sauté asparagus with salt and pepper for 8-10 minutes until tender-crisp.
  3. Heat sesame oil in a wok over medium-high heat; add garlic and sauté until fragrant.
  4. Add cubed chicken; cook until golden brown on all sides (5-7 minutes).
  5. Stir in mushrooms and red bell pepper; stir-fry for an additional 3-4 minutes.
  6. Combine soy sauce, plant-based oyster sauce, hoisin sauce, and cornstarch slurry; cook until the sauce thickens.
  7. Serve hot alongside rice and roasted asparagus; garnish with chopped green onions.
