Ingredients
- 5 cups all-purpose flour
- 1/2 cup sugar
- 2.5 tsp salt
- 1/4 cup sourdough starter
- 1 cup water
- 1/2 cup milk
- 12 oz unsalted butter (for laminating)
- 3 tbsp chopped pistachios (for filling)
- 4 tbsp pistachio paste (for assembly)
- Optional: green food coloring
Instructions
- In a stand mixer, combine flour, sugar, salt, sourdough starter, water, milk, melted butter, almond essence, and yeast until soft dough forms.
- Knead dough for about 10 minutes until smooth and elastic. Cover and let rise in a warm place for about 4 hours or until doubled in size.
- While dough rises, create a butter block by rolling chilled unsalted butter into a rectangle between parchment paper and refrigerate until firm.
- Roll out the risen dough into a large rectangle and envelop the chilled butter block inside. Roll out gently to create layers.
- Cut triangles from the dough and spoon pistachio paste at the base before rolling tightly into crescent shapes.
- For custard filling, heat milk, sugar, cornstarch, egg yolks, vanilla essence, and salt until thickened and cool before using.
- Preheat oven to 375°F (190°C), brush assembled croissants with egg yolk mixed with cream, and bake for about 25 minutes until golden brown.
