Instructions
- Preheat the oven to 175°C (350°F). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together ground almonds, flour, baking powder, cinnamon, and salt.
- In a large bowl, beat sugar, eggs, and olive oil until smooth. Stir in orange juice, zest, and vanilla.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Pour batter into the prepared pan and bake for 30–35 minutes until a toothpick comes out clean.
- While baking, prepare syrup by simmering sugar, water, cinnamon stick, and lemon juice until dissolved.
- Once baked, pour warm syrup over the cake while still in the pan to soak it up.
