  • 1 cinnamon stick (for syrup)
  • 5ml lemon juice (for syrup)

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together ground almonds, flour, baking powder, cinnamon, and salt.
  3. In a large bowl, beat sugar, eggs, and olive oil until smooth. Stir in orange juice, zest, and vanilla.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Pour batter into the prepared pan and bake for 30–35 minutes until a toothpick comes out clean.
  6. While baking, prepare syrup by simmering sugar, water, cinnamon stick, and lemon juice until dissolved.
  7. Once baked, pour warm syrup over the cake while still in the pan to soak it up.
