Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 tablespoons dried oregano
  • 1 tablespoon dried basil
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cucumber, peeled, seeded, and grated
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large flour tortillas
  • 1 red onion, thinly sliced
  • 1 pint cherry tomatoes, halved

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, oregano, basil, garlic powder, salt, and pepper. Add the chicken strips and toss to coat completely. Cover the bowl and refrigerate for at least 30 minutes or up to 2 hours.
  2. While the chicken marinates, prepare the tzatziki sauce. In a medium bowl, combine grated cucumber, Greek yogurt, minced garlic, fresh dill, salt, and pepper. Gently stir to combine. Cover and refrigerate until ready to serve.
  3. Preheat a large skillet or grill pan over medium-high heat. Remove the chicken from the marinade and add it to the hot skillet. Cook for about 6-8 minutes until cooked through and lightly browned.
  4. Warm tortillas according to package directions in a dry skillet, microwave, or oven.
  5. Spread tzatziki sauce onto each tortilla. Add cooked chicken strips, red onion slices, and halved cherry tomatoes. Top with crumbled feta cheese if desired.
  6. Fold tortillas in half or wrap them like burritos. Serve immediately and enjoy your Greek Chicken Gyros with Lemon-Herb Marinade!
