Instructions
- Heat olive oil in a saucepan over medium heat. Add the chopped onion and cook until translucent (about 3–4 minutes).
- Stir in the minced garlic and sauté for another 30 seconds until fragrant.
- Add the rice and toast for 1–2 minutes until slightly golden.
- Pour in the broth and add oregano, salt, and pepper. Stir well and bring to a boil.
- Reduce heat to low, cover the saucepan, and simmer for 15–18 minutes until the rice is tender and all liquid has been absorbed.
- Remove from heat; stir in lemon juice, zest, and parsley if using.
- Fluff the rice with a fork before serving warm.
