  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 sweet potato, peeled and cubed
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken pieces with garlic powder, onion powder, salt, and pepper. Grill the chicken for 2-3 minutes on each side or until fully cooked through.
  2. Preheat the oven to 400°F (200°C). Toss sweet potato, zucchini, and red onion with olive oil, garlic powder, onion powder, salt, and pepper in a mixing bowl. Spread the vegetable mixture in a single layer on a baking sheet and roast for 20-25 minutes or until tender-crisp.
  3. In a small bowl, combine Greek yogurt, cilantro, lime juice, minced garlic, salt, and pepper. Whisk together until smooth.
  4. Divide the roasted vegetables among serving bowls. Top each bowl with grilled chicken pieces and drizzle generously with the Cilantro Lime Dressing before serving.
