  • 1 Yukon gold potato (peeled and diced)
  • 1 cup green beans (trimmed and diced)
  • 1 can red kidney beans (15 oz, drained and rinsed)
  • 1 can white beans (15 oz, drained and rinsed)
  • 1 can fire roasted diced tomatoes (28 oz)
  • 5 cups chicken broth
  • ½ cup uncooked ditalini pasta

Instructions

  1. In a large pot over medium heat, cook ground turkey until browned; remove from pot.
  2. In the same pot, sauté celery, onion, carrots, salt, pepper, and chili flakes for about 8–10 minutes until softened.
  3. Add minced garlic; cook for an additional minute until fragrant.
  4. Return turkey to the pot along with zucchini, potato, green beans, both types of beans, tomatoes, broth, and bay leaves. Stir well and bring to a gentle boil.
  5. Reduce heat to medium-low; simmer for 30–45 minutes or until potatoes are tender.
  6. Add pasta and cook for another 7–10 minutes until al dente.
  7. Remove bay leaves before serving hot.
