- 2 ribs celery (diced)
- 1 yellow onion (diced)
- 2 large carrots (diced)
- 5 cloves garlic (minced)
- 1 medium zucchini (diced)
- 1 Yukon gold potato (peeled and diced)
- 1 cup green beans (trimmed and diced)
- 1 can red kidney beans (15 oz, drained and rinsed)
- 1 can white beans (15 oz, drained and rinsed)
- 1 can fire roasted diced tomatoes (28 oz)
- 5 cups chicken broth
- ½ cup uncooked ditalini pasta
Instructions
- In a large pot over medium heat, cook ground turkey until browned; remove from pot.
- In the same pot, sauté celery, onion, carrots, salt, pepper, and chili flakes for about 8–10 minutes until softened.
- Add minced garlic; cook for an additional minute until fragrant.
- Return turkey to the pot along with zucchini, potato, green beans, both types of beans, tomatoes, broth, and bay leaves. Stir well and bring to a gentle boil.
- Reduce heat to medium-low; simmer for 30–45 minutes or until potatoes are tender.
- Add pasta and cook for another 7–10 minutes until al dente.
- Remove bay leaves before serving hot.
