Ingredients
- 4 cups all-purpose flour

- 2 1/4 tsp instant yeast
- 1 1/4 cups cold whole milk (or almond milk)
- 1 cup unsalted butter (high-fat)
- 16 chocolate batons (or 8 oz semi-sweet/dark chocolate)
- Optional: 1 large egg mixed with 1 tbsp milk (for egg wash)
Instructions
- Mix flour, sugar, salt, and yeast in a stand mixer bowl. Gradually add cold milk until you form a soft dough.
- Knead the dough on a floured surface until smooth (about 5–7 minutes). Place in a greased bowl, cover, and let rise until doubled (about 1 hour).
- Prepare the butter layer by pounding the unsalted butter between parchment paper into a square and chill.
- Roll out the risen dough into a rectangle, place chilled butter on one half, fold over to encase it.
- Roll out again and fold into thirds. Chill for about 30 minutes. Repeat this lamination process two more times.
- Roll out final dough and cut triangles for croissants. Place chocolate at the base and roll upwards tightly.
- Let shaped croissants rise again until puffed (about an hour). Preheat oven to 400°F (200°C).
- Optionally brush with egg wash before baking for golden color and bake for about 15–20 minutes until golden brown.
