  • 1 (15 ounce) can dark red kidney beans, drained and rinsed
  • 4 cups chicken stock
  • 1 cup uncooked ditalini
  • Kosher salt
  • Fresh cracked pepper
  • Grated Parmesan for garnish
  • Fresh chopped parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground beef; cook until browned. Remove with a slotted spoon.
  2. In the same pot, sauté diced onion, sliced carrots, and celery for about 5 minutes.
  3. Stir in minced garlic, tomato paste, and Italian seasoning; cook until aromatic.
  4. Add tomato sauce, diced tomatoes, both types of beans, chicken stock, uncooked ditalini pasta, and cooked beef back into the pot.
  5. Bring to a simmer; reduce heat to medium-low and cook for 5 minutes or until pasta is al dente.
  6. Season with salt and pepper; garnish with grated Parmesan cheese and fresh parsley before serving.
