  • 1/2 cup mayonnaise

  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup cooked rice
  • 2 large eggs
  • 1 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, mix chicken with soy sauce, gochujang, honey, sesame oil, garlic powder, black pepper, and red pepper flakes. Let it marinate for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Cook marinated chicken for about 2-3 minutes per side until fully cooked.
  3. In a small bowl, whisk together mayonnaise, sriracha, lemon juice, garlic powder, salt, and black pepper until well combined.
  4. Place cooked rice in bowls and top with scrambled eggs, grilled chicken, veggies, and drizzle with spicy mayo.
