- 1 cup dry green or brown lentils
- 2 carrots, sliced
- 4 cups vegetable broth
- 1 onion, diced
- 1 tsp thyme
- Salt and pepper, to taste
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup milk
- 4 tbsp butter
- 4 large potatoes, peeled and chopped
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and chopped celery; cook until softened (5-7 minutes).
- Stir in minced garlic for about 1 minute. Then add lentils, diced tomatoes, vegetable broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes until lentils are soft.
- Meanwhile, boil peeled and chopped potatoes in salted water until tender (15-20 minutes), then drain.
- Mash the potatoes with butter, milk, salt, and pepper until smooth.
