  • 2 carrots, sliced
  • 4 cups vegetable broth
  • 1 onion, diced
  • 1 tsp thyme
  • Salt and pepper, to taste
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup milk
  • 4 tbsp butter
  • 4 large potatoes, peeled and chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion, sliced carrots, and chopped celery; cook until softened (5-7 minutes).
  2. Stir in minced garlic for about 1 minute. Then add lentils, diced tomatoes, vegetable broth, thyme, and bay leaf.
  3. Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes until lentils are soft.
  4. Meanwhile, boil peeled and chopped potatoes in salted water until tender (15-20 minutes), then drain.
  5. Mash the potatoes with butter, milk, salt, and pepper until smooth.
  6. Serve the lentil stew generously over the creamy mashed potatoes.
