Instructions

  1. Blanch cauliflower in boiling water for 1–2 minutes until tender-crisp, then transfer to an ice bath.
  2. In a large bowl, mix blanched cauliflower with cherry tomatoes, red onions, olives, and parsley.
  3. In a small bowl, whisk together olive oil, vinegar, Dijon mustard, minced garlic, oregano, basil, salt, black pepper, and optional red pepper flakes.
  4. Pour the dressing over the salad mixture and toss well to coat evenly.
