  • 2 cloves of garlic
  • 1 jalapeño pepper
  • 3 tablespoons of tomato paste
  • 2 teaspoons of cumin
  • 2 teaspoons of paprika
  • 1/2 teaspoon of oregano
  • Fresh coriander
  • Juice of half a lime
  • Salt and black pepper
  • Assorted bell peppers (red, green, yellow) and white onion

Instructions

  1. In a mini food processor, combine garlic, jalapeño, tomato paste, cumin, paprika, oregano, lime juice, coriander, salt, and black pepper. Blend until smooth.

  3. Soak wooden skewers in water for 30 minutes if using them. Alternate threading marinated chicken with chopped vegetables onto the skewers.
  4. Preheat your grill or oven to medium-high heat (220°C/425°F). Cook skewers on the grill for about 15 minutes or bake in the oven for 25-30 minutes until cooked through.
