  • 65 g unsalted butter (very soft)
  • 2 large eggs
  • 75 ml buttermilk
  • 20 ml neutral oil
  • 1/2 tsp vanilla extract
  • 50 g peach jam
  • 50 g diced fresh peach
  • 60 g egg whites
  • 120 g light brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 180 g unsalted butter (room temperature)

Instructions

  1. Preheat the oven to 180°C (350°F) and grease mini cake pans.
  2. In one bowl, mix flour, sugar, baking powder, bicarbonate of soda, and sea salt. In another bowl, cream the softened butter until fluffy and add eggs one at a time. Mix in buttermilk, neutral oil, and vanilla extract.
  3. Gradually combine dry ingredients with wet ingredients until just mixed.
  4. Divide batter into mini pans and bake for about 25 minutes or until a toothpick comes out clean. Cool completely.
  5. Prepare peach filling by mixing peach jam with diced peaches.
  6. For buttercream, beat egg whites until foamy, add brown sugar gradually until stiff peaks form, then mix in cinnamon and vanilla before adding softened butter until smooth.
  7. Slice cakes horizontally into layers, spread peach filling between layers, frost with buttercream, and decorate if desired.
