- 60 g powdered sugar
- 115 g unsalted butter, cold and cubed
- 1 egg yolk
- 1 medium apple, peeled and diced
- 80 g mixed berries (fresh or frozen)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
Instructions
- In a mixing bowl, combine flour and powdered sugar. Add cold butter, rubbing it into the flour until crumbly. Mix in egg yolk and add cold water if needed to form a dough.
- Roll out the dough on a floured surface to about 0.5 cm thick and cut circles for pie bases.
- Fit the dough into muffin tins, prick with a fork to prevent bubbling.
- In another bowl, mix diced apple, berries, sugar, lemon juice, cinnamon, and cornstarch for the filling.
- Spoon filling into each pie crust.
- Preheat oven to 180°C (350°F) and bake for 25–30 minutes until golden brown.
- Allow to cool slightly before serving.
