  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Instructions

  1. In a mixing bowl, combine flour and powdered sugar. Add cold butter, rubbing it into the flour until crumbly. Mix in egg yolk and add cold water if needed to form a dough.
  2. Roll out the dough on a floured surface to about 0.5 cm thick and cut circles for pie bases.
  3. Fit the dough into muffin tins, prick with a fork to prevent bubbling.
  4. In another bowl, mix diced apple, berries, sugar, lemon juice, cinnamon, and cornstarch for the filling.
  5. Spoon filling into each pie crust.
  6. Preheat oven to 180°C (350°F) and bake for 25–30 minutes until golden brown.
  7. Allow to cool slightly before serving.
