Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 2 teaspoons instant yeast
  • 1 cup cold whole milk
  • 1 cup unsalted butter (softened)
  • 1 cup chocolate batons or semi-sweet chocolate
  • 1 large egg (for egg wash)
  • 1 tablespoon milk (optional)
  • 1 tablespoon confectioners’ sugar (optional for garnish)

Instructions

  1. In one bowl, mix flour, sugar, salt, and yeast. In another bowl, combine cold milk and softened butter until smooth.
  2. Gradually mix the wet ingredients into the dry ingredients until a rough dough forms.
  3. Knead gently on a floured surface until smooth, then wrap and chill for at least 30 minutes.
  4. Roll out chilled dough into a rectangle; place softened butter in the center and fold edges over to encase it completely.
  5. Roll out again to form a larger rectangle, then fold into thirds and chill for another 30 minutes. Repeat this folding and chilling process two more times.
  6. Roll out the layered dough into a final rectangle, cut into triangles, place chocolate at the base of each triangle, and roll tightly from base to tip.
  7. Arrange croissants on a lined baking sheet; let rise in a warm place until doubled in size (about 45 minutes).
  8. Preheat oven to 400°F (200°C). Brush with an egg wash made from beaten egg mixed with milk and bake for about 20 minutes or until golden brown.
