Instructions

  1. In a bowl, combine warm milk, yeast, and sugar. Let it sit until foamy (about 5 minutes).
  2. In a stand mixer bowl, mix softened butter, cinnamon, flour, and salt until combined. Add the yeast mixture and knead until smooth. Cover and let rise until doubled in size (about 90 minutes).
  3. Roll softened butter between parchment paper into a rectangle about 1/2 inch thick; chill until firm.
  4. Roll out dough into a large rectangle; place chilled butter layer in the center. Fold dough over to encase the butter completely.
  5. Roll out again into a long rectangle; fold into thirds and repeat this step two more times to create layers.
  6. Cut triangles from rolled dough; place chopped chocolate at the base of each triangle before rolling tightly.
  7. Preheat oven to 400°F (200°C). Brush croissants with egg wash made from beaten egg and milk; bake for about 20 minutes or until golden brown.
