  • 2 Tbsp (28g) salted butter, softened
  • 2 Tbsp half and half
  • 1/4 tsp peppermint extract
  • 1 1/2 cups (200g) powdered sugar
  • 1/4 cup (42g) finely crushed peppermint bits or candy canes

Instructions

  1. In a mixing bowl, whisk together flour, cornstarch, and salt; set aside.
  2. Cream unsalted butter and powdered sugar in an electric mixer until smooth.
  3. Add peppermint extract and gradually mix in the dry ingredients until just combined.
  4. Chill the dough for about 1 hour.
  5. Preheat the oven to 350°F (175°C) and scoop tablespoon-sized balls of dough onto an ungreased baking sheet.
  6. Bake for 10 to 13 minutes until lightly golden; cool on wire racks.
  7. For the frosting, cream salted butter, half and half, peppermint extract, and additional powdered sugar until fluffy.
