Ingredients

Scale
  • 1 cup yellow cornmeal
  • ½ cup all-purpose or whole wheat flour
  • ¾ tsp salt
  • 1 tbsp baking powder
  • 2 eggs
  • 1 cup plain low-fat yogurt or buttermilk
  • ½ cup milk
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 4 celery stalks, diced
  • 4 garlic cloves, minced

Instructions

  1. Preheat oven to 400°F.
  2. In one bowl, combine cornmeal, flour, salt, baking powder. In another bowl, whisk eggs, yogurt (or buttermilk), milk until smooth.
  3. Mix both mixtures until just combined. Pour into a greased baking pan and bake for 35–40 minutes until golden brown.
  4. Allow cornbread to cool before crumbling into small pieces.
  5. In a skillet over medium heat, sauté onion and celery in olive oil until softened. Add garlic near the end.
  6. In a large bowl, combine crumbled cornbread with sautéed vegetables and add herbs and seasonings. Gradually mix in milk until desired consistency is reached.
  7. Transfer stuffing into a buttered baking dish and cover with foil; bake at 325°F for about 30 minutes. Remove foil for the last 10 minutes if you prefer a crispy top.
