  • 1/4 cup brown sugar

  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large bowl, combine flour, oats, brown sugar, baking soda, and salt. Stir in melted butter until blended.
  3. Press half of the crumble mixture into the bottom of the baking dish to form the base.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the base layer and spread evenly.
  6. Sprinkle the remaining crumble mixture over the top and add nuts if desired.
  7. Bake for 25–30 minutes until golden brown and set.
  8. Allow to cool completely before slicing into squares.
