  • 2 tbsp olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1/2 red onion
  • 3 cloves garlic
  • 23 jalapeño peppers
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk or half-and-half
  • 1 cup grated Parmesan cheese

Instructions

  1. Cook the penne pasta according to package directions until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning. In a skillet, heat 1 tbsp olive oil over medium-high heat and cook chicken until browned (5-7 minutes). Transfer to a plate.
  3. In the same skillet, add remaining oil and sauté bell peppers, onion, garlic, and jalapeños until tender-crisp (about 5 minutes). Remove from skillet.
  4. Melt butter in the skillet over medium heat; whisk in flour for 1-2 minutes. Gradually add milk, stirring until smooth.
  5. Bring sauce to a simmer; stir in Parmesan cheese, salt, and pepper until melted and smooth.
  6. Combine cooked pasta, chicken, and sautéed vegetables with the sauce; toss gently.
  7. Serve hot garnished with chopped parsley.
