  • 1 ripe avocado
  • 1/4 red onion, finely chopped

  • 1 jalapeño, seeded and minced (optional)
  • 1 lime, juiced
  • Salt to taste
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon chopped parsley
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cooked rice
  • Lime wedges, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a bowl, mix shrimp with olive oil, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using) until well-coated.
  2. Preheat your grill or grill pan over medium heat. Grill the seasoned shrimp for 2-3 minutes per side or until they turn pink and opaque. Remove from heat once cooked through.
  3. In a small bowl, mash the ripe avocado using a fork until smooth. Stir in finely chopped red onion, cilantro, minced jalapeño (if using), lime juice, and salt to taste. Mix well.
  4. In another small bowl, whisk together mayonnaise, sour cream, chopped parsley, lemon juice, minced garlic, salt, and black pepper until smooth.
  5. Divide cooked rice among serving bowls. Top each bowl with grilled shrimp, spoon generous amounts of guacamole over them, and drizzle with creamy sauce. Garnish with lime wedges and fresh cilantro.
