  • 1 kg chuck or braising steak (cut into 3 cm cubes)

  • 2 tsp ground coriander
  • 1 tsp garam masala

  • 3 cm cinnamon stick

  • 2 tbsp chopped cilantro (plus more for garnish)

Instructions

  1. Sear the beef: Heat 1 tbsp oil in a frying pan over medium heat. Brown the beef cubes in batches until evenly browned. Transfer to the slow cooker.
  2. Sauté aromatics: In the same pan, add remaining oil and sauté onions, garlic, and ginger for about 2–3 minutes until softened.
  3. Add spices: Stir in turmeric, coriander, cumin, garam masala, and red chili powder. Cook until fragrant (about 1 minute).
  4. Deglaze pan: Pour in beef broth and water, scraping any browned bits from the bottom while simmering for about 2 minutes.
  5. Combine: Transfer mixture from the frying pan to the slow cooker along with cinnamon stick, bay leaf, cilantro, and salt.
  6. Cook: Cover and cook on low for about 8 hours or high for approximately 4 hours until beef is tender.
  7. Serve: Garnish with additional cilantro before serving. Pair with naan or basmati rice.
