Ingredients
- 400g pasta (your choice)
- 2 roasted corn cobs
- 3 green onions
- 1 shallot
- 2 jalapeños
- ½ cup cilantro
- 1 cup cotija cheese
- 1 cup sour cream
- ½ cup mayo
- 3 cloves garlic
- juice and zest of 1 lime
- 1 tsp smoked paprika
- 1 tsp chili powder
- salt & pepper to taste
Instructions
- Roast the corn by frying in olive oil on medium heat for about 10–15 minutes until golden brown. Remove kernels from cob.
- Cook pasta in salted boiling water until al dente. Drain and toss with olive oil to prevent sticking.
- Prep the remaining ingredients by chopping the green onion, shallot, garlic, jalapeño, and cilantro; crumble the cotija cheese.
- In a bowl, mix sour cream, mayo, minced garlic, lime juice/zest, smoked paprika, chili powder, salt & pepper for the dressing.
- Combine all ingredients in a large bowl and mix well. Garnish with additional cotija cheese and herbs if desired before serving.
