  • ¼ cup glace fruit mix
  • ½ cup glace mixed cherries
  • 1 apple
  • 1 carrot
  • zest and juice of 1 orange
  • 3 tbsp apple juice
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp allspice
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ cup butter (softened)
  • 1 cup brown sugar
  • 1 egg
  • extra apple juice (for serving)
  • icing sugar (for garnish)
  • ½ cup butter for sauce
  • 1 cup granulated sugar
  • ½ cup heavy cream

Instructions

  1. In a large mixing bowl, combine sultanas, chopped prunes, candied citrus peel, glace fruit mix, grated apple and carrot, orange zest and juice, and apple juice. Cover and let sit for at least an hour or overnight.
  2. Prepare the pudding basin by spraying it with non-stick spray and lining it with parchment paper.
  3. In another bowl, mix flour, baking powder, baking soda, salt, and spices until well combined.
  4. In a large bowl, cream together softened butter and brown sugar until crumbly. Beat in the egg, then fold in the prepared fruit mixture.
  5. Gradually add dry ingredients to the wet mixture until smooth. Spoon into the prepared basin, cover tightly with parchment paper and foil.
  6. Steam over simmering water for 3.5 to 4 hours or until cooked through (200°F internal temperature).
  7. Allow to cool slightly before removing from the basin. Serve warm with apple juice butter sauce.
