  • 1 medium carrot (grated)
  • 3 large potatoes (cubed)
  • 4 cups spinach (chopped)
  • 1 zucchini (cubed)
  • 3 tbsp lemon juice
  • 4 hard-boiled eggs (cubed)
  • 1/2 cup parsley or dill (chopped)
  • Salt and pepper to taste
  • Sour cream for serving

Instructions

  1. In a large pot, bring the broth to a boil. Add cubed potatoes and cook for about 15 minutes until tender.
  2. Meanwhile, heat olive oil in a skillet over medium heat. Sauté minced onion and grated carrot until softened, about 10 minutes.
  3. Add sautéed vegetables to the pot along with zucchini and spinach. Cook for an additional 5–7 minutes.
  4. Stir in lemon juice, hard-boiled eggs, parsley or dill, and season with salt and pepper.
  5. Serve immediately topped with sour cream.
