  • 1 cup sour cream

  • 1 cup shredded sharp cheddar cheese
  • 1 cup finely shredded parmesan cheese, divided
  • 3/4 cup + 1/3 cup panko bread crumbs, divided
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • Fresh parsley and dried chives for flavor
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish with non-stick spray.
  2. Boil the sliced yellow squash in water for about 5-6 minutes until nearly tender, then drain.
  3. In a mixing bowl, combine sour cream, egg, panko (1/3 cup), cheddar cheese, half of the parmesan cheese, parsley, and chives. Stir until well mixed.
  4. Sauté the onion in butter until golden brown; add garlic and cook briefly.
  5. Combine the drained squash with the creamy mixture and season with salt and pepper. Pour into the baking dish.
  6. For the topping, mix melted butter with remaining panko and parmesan; sprinkle over the casserole.
