  • 1 bell pepper, chopped
  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1 lb ground turkey
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 eggs
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon Italian seasoning (divided)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grate the zucchini and press out excess moisture using a colander.
  3. In a large mixing bowl, combine drained zucchini, eggs, parmesan cheese, black pepper, onion powder, and Italian seasoning.
  4. Spread the mixture in a greased 9×13 baking pan and bake for 20 minutes until set.
  5. Sauté onion and bell pepper in olive oil until soft; add garlic and ground turkey until browned.
  6. Stir in marinara sauce and remaining Italian seasoning.
  7. Spread turkey mixture over the baked zucchini crust and top with mozzarella cheese.
  8. Bake for an additional 20 minutes until cheese is bubbly and golden.
