Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and yeast. Gradually mix in cold milk until a soft dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Mix softened butter with the additional flour until smooth and shape into an 8×10-inch rectangle on parchment paper. Refrigerate until firm.
  4. Roll out chilled dough into a large rectangle, place the butter layer in the center, and fold over to encase it. Roll out again into a long rectangle and fold into thirds like a letter; repeat this process two more times.
  5. Cut triangles from the final rolled dough, place chocolate batons at the base, and roll them up tightly.
  6. Place on a baking sheet lined with parchment paper and let rise until doubled in size.
  7. Preheat your oven to 400°F (200°C). Brush croissants with egg wash made from one egg mixed with one tablespoon of milk. Bake for about 20 minutes or until golden brown.
