  • 5 Butter croissants
  • 1/2 cup Unsalted butter (room temperature)
  • 1/2 cup Granulated sugar
  • 1/2 tsp Salt
  • 2 Eggs
  • 1 cup Almond flour
  • 2 tbsp All-purpose flour
  • 1 cup Water (for simple syrup)
  • 1/2 cup Granulated sugar (for simple syrup)
  • 10 tbsp Sliced almonds (for topping)
  • 3 tbsp Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, heat water and granulated sugar over medium heat until dissolved to make simple syrup. Let cool.
  3. In a bowl, combine butter, salt, and granulated sugar; mix until creamy. Add eggs, then almond flour and all-purpose flour; blend until smooth.
  4. Slice croissants in half horizontally and brush with simple syrup. Pipe or spread almond cream inside each croissant half.
  5. Top with more almond cream and sprinkle sliced almonds on top.
  6. Bake for about 15–20 minutes or until golden brown. Dust with powdered sugar before serving.
